- Simmer ham hocks and onion in 2 qts of water in covered pan for 1 hour. Drain stock into bowl, cut meat off hocks and add in to stock (throw away skin, fat and bones from hocks). Chill overnight.
- The next day skim any fat from cool stock and add in water to make about 2-2 1/2 qts. In a large soup pan combine all ingredients and simmer for 2 or possibly more hrs. Serves 6 generously. Double or possibly triple for a large crowd.
