Hearty Fish Chowder

Ingredientes

  • 1 pound frzn cod or possibly haddock, partially thawed & cubed
  • 1 lg. onion, minced
  • 4 tbsp. butter
  • 2 c. water
  • 2 teaspoon salt
  • 1/2 teaspoon basil
  • 1/4 teaspoon pepper
  • 1 can corn
  • 1 can evaporated lowfat milk
  • 3 lg. potatoes, cubed

Direcciones

  1. In large kettle, saute/fry onion in butter till soft. Add in potatoes, spices and water. Cover and simmer 15-20 min till potatoes are tender. Place fish on top (do not stir). Simmer 15-20 min more. Add in evaporated lowfat milk and top with fresh parsley if you have some. Heat through, but don't boil after adding lowfat milk.
  2. Tastes great reheated, but take care not to boil it. Serves 6-8.
