Ingredientes

  • 1/4 lb Ham, cooked, cut into 1/2
  • 2 x Celery stalk, diced
  • 2 x Carrot, medium, minced
  • 1 x Onion, medium,minced
  • 1 x 8 Oz zucchini, diced
  • 2 x 15 Ounce. Can white beans
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 tsp Basil
  • 1/4 tsp Pepper
  • 1 can (16 ounce) tomato, stewed
  • 1 can (14 ounce) chicken broth
  • 1 c. Spinach, fresh, minced
  • 1 dsh Parmesan cheese, grated

Direcciones

  1. Remove 1 1/2 c. white kidney beans to medium bowl; mash beans till smooth with a potato masher or possibly fork.
  2. In 5 quart. pot, heat extra virgin olive oil, ham, celery, carrots, onion, zucchini, basil, and pepper till veggies are tender and begin to brown, about 15 min.
  3. Stir in stewed tomatoes, chicken broth, minced spinach, mashed white beans, and 2 c. water, use spoon to break up tomatoes; heat until boiling.
  4. Reduce heat, cover, and simmer 15 min to blend flavors. Stir in remaining beans; heat through.
  5. Sprinkle with parmesan cheese and serve.
