Receta Hearty Pea Soup
This hearty soup is perfect on a chilly fall evening~ Top off bowls of this steaming soup with a bacon rose!!
Hearty Pea Soup~
- 1 package (1 pound) dried whole peas, soaked overnight*
- 8 cups vegetable broth or water
- 1 meaty ham bone, smoked ham hocks or cubed cooked ham
- 2 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 medium carrots, peeled and sliced
- 1/2 cup chopped celery
- 1 leek, washed and sliced (white part only)
- 3 t chicken bouillon granules
- 1 t dried parsley
- 1 t dried marjoram
- 1/2 t dried basil
- 1/2 t garlic powder
- 1/4 t salt
- 1/4 t pepper
- 1/2 t liquid smoke, optional
In a Dutch oven or soup kettle, place the soaked peas, broth or water and ham bone. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally. Remove ham bone; when cool enough to handle, remove meat from the bone. Chop ham and return to soup pot. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until vegetables are tender.
*In large pan or large bowl cover peas with water. Soak overnight. Drain, rinse with water and discard any skins left from peas.
