%3C/p%3E%3Cp%3EI%20asked%20Auntie%20Maggie%20what%20she%20does%20to%20create%20her%20awesome%20deliciousness%20and%20I%20have%20to%20admit%20that%20my%20enthusiasm%20for%20the%20whole%20project%20quadrupled%20when%20she%20said%20she%20just%20puts%20all%20the%20ingredients%20right%20into%20the%20food%20processor.%20After%20the%20previous%20week's%20tomato%20sauce%20canning%20bonanza%20with%20its%20requisite%20peeling,%20slicing%20and%20dicing,%20I%20was%20ready%20for%20this%20quicker,%20easier%20prep%20method.%3C/p%3E%3Cp%3EThe%20ingredients%20are%20simple%20-%20tomatoes,%20onions,%20garlic,%20cilantro,%20jalape%C3%B1os,%20white%20or%20apple%20cider%20vinegar,%20sugar,%20and%20salt.%20You%20wash%20things%20off,%20chop%20them%20roughly,%20dump%20them%20in%20the%20Cuisinart,%20blend%20for%20a%20bit,%20cook%20for%20a%20bit%20and%20then%20can%20it%20all.%20Es%20tan%20f%C3%A1cil!%3C/p%3E%3Cp%3EI%20am%20morally%20opposed%20to%20seeding%20tomatoes%20so%20my%20salsa%20was%20a%20bit%20watery%20when%20it%20came%20out%20of%20the%20food%20processor%20but%20I%20just%20cooked%20it%20down%20until%20it%20reached%20the%20perfect%20consistency.%3C/p%3E%3Cp%3EAs%20a%20result%20of%20the%20previous%20week's%20tomato%20sauce%20canning,%20when%20it%20came%20time%20to%20start%20sterilizing%20jars,%20we%20realized%20there%20was%20a%20serious%20shortage%20of%20pints...%20But%20the%20gods%20of%20serendipity%20were%20shining%20on%20our%20house%20that%20day%20as%20this%20potential%20tragedy%20led%20to%20a%20truly%20brilliant%20innovation%20-%20half-pint%20jars%20of%20salsa!%3C/p%3E%3Cp%3ENo%20more%20rushing%20to%20use%20up%20a%20full%20pint%20of%20salsa,%20no%20more%20feeling%20guilty%20about%20wasting%20salsa,%20and%20no%20more%20feeling%20revolted%20by%20the%20mold%20colonies%20growing%20in%20our%20fridge%20-%20it's%20a%20win-win-win.%3C/p%3E%3Cp%3EThe%20cheerful%20jars%20lining%20the%20shelf%20in%20our%20pantry%20should%20help%20add%20some%20(mild)%20heat%20to%20the%20coming%20cold%20winter%20days.%3C/p%3E%3Cp%3EHeirloom%20Tomato%20Salsa%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Place%20the%20tomatoes,%20onions,%20garlic,%20and%20cilantro%20in%20the%20bowl%20of%20a%20food%20processor%20and%20blend%20until%20it%20reaches%20the%20desired%20consistency.%3C/p%3E%3Cp%3E2.%20Put%20the%20blended%20mixture%20into%20a%20large,%20non-reactive%20pot,%20add%20the%20jalape%C3%B1os,%20sugar,%20salt%20and%20vinegar,%20bring%20to%20a%20boil%20and%20then%20simmer%20until%20it%20reaches%20the%20desired%20thickness.%3C/p%3E%3Cp%3E3.%20While%20the%20salsa%20is%20cooking,%20sterilize%20your%20jars%20and%20lids%20in%20the%20hot%20water%20bath%20for%2010%20minutes.%20Drain%20and%20remove%20the%20jars,%20ladle%20the%20hot%20salsa%20directly%20into%20the%20hot%20jars%20leaving%201/4%22%20head%20space,%20wipe%20the%20rims%20with%20a%20clean,%20damp%20paper%20towel,%20apply%20the%20lids,%20and%20secure%20the%20bands.%3C/p%3E%3Cp%3E4.%20Process%20in%20a%20hot%20water%20bath%20canner%20for%2020%20minutes,%20then%20remove%20from%20the%20water%20and%20let%20the%20jars%20cool%20on%20a%20rack%20or%20several%20dishtowels%20to%20avoid%20extreme%20temperature%20changes%20which%20can%20crack%20the%20jars.%20One%20cooled,%20check%20the%20seals%20(the%20lids%20must%20be%20popped%20down)%20and%20store%20in%20a%20cool%20dark%20place%20for%20up%20to%20one%20year.%20If%20any%20of%20the%20lids%20have%20not%20sealed%20properly,%20store%20the%20jar%20in%20the%20fridge%20and%20use%20within%20one%20week.%3C/p%3E%3Cp%3ENot%20feeling%20totally%20confident%20about%20how%20to%20can%20food%20yet?%20Check%20out%20my%20how-to%20post%20here%20for%20an%20overview%20of%20the%20process.%3C/p%3E){kind=link}
