Heirloom Tomato Sauce

What is it about heirloom tomatoes that just makes you want to just take a bite out of one, just like you would an apple?

How could anyone resist the great unique characteristics of the heirloom.

I decided to make an Heirloom Tomato Sauce, chock full of vegetables.

Heirloom Tomato Sauce

Serves: 4 cups

Ingredients

Directions

Heat oil in a large saucepan.

Add carrots, gypsy peppers,shallots, zucchini and garlic. Saute until onions are softened, about 3-4 minutes.

Add tomatoes and wine and bring to a boil; reduce heat to low and simmer for 45 minutes, until vegetables are soft.

Use an immersion blender or food processor to puree sauce.

Season with salt and pepper.

The heirlooms, showed up in my CSA basket and you probably won’t believe me if I tell you that I have never made my own tomato sauce from scratch. when you led a busy life with children and tons of activities, a jar of store-bought tomato sauce always worked for me in the past. But I have to tell you, that what didn’t fit in my two pint jars, I used as a dipping sauce for my french bread.

Um, I really wanted more than two slices of bread, but I resisted the urge. I loved the experience of making my own sauce and getting to choose which veggies I wanted to use. So go ahead and change-up the veggies that I listed in the ingredients section to those that you love.
