Receta Hells Canyon Chukar Stir Fry

- Wash chukar and pat dry. Cut inot 1/2" cubes. Mix egg whites, salt and cornstarch. Add in chukar and toss to coat. Chill for 20-30 min.
- Heat oil in wak or possibly deep-sided saute/fry pan. Add in chukar and quickly stir-fry.
- Do not let pcs stick together. Cook 3 min. Remove chukar to plate with slotted spoon. Reserve 2 Tablespoons oil and pour into clean pan or possibly wok on high heat. Add in the addtional ingredients. Stir-fry cashews or possibly almonds and green onions for 1 minute. Add in rice wine, soy sauce and chukar to pan. Stir 1 minute. Add in snow peas and stir 1 minute. Transfer immediately to heated platter. Serve with rice.
