,%20I%20ate%20a%20lot%20of%20processed%20veggie%20foods,%20because%20they%20were%20easy.%20Easy%20to%20find,%20easy%20to%20cook%20up,%20and%20fast.%20I%20ate%20a%20lot%20of%20faux%20veggie%20meat%20slices%20in%20sandwiches,%20veggie%20dogs,%20etc.%20And%20I%20still%20ate%20regular%20yogurt,%20cottage%20cheese,%20cheese,%20so%20there%20was%20plenty%20for%20me%20to%20eat.%20But%20perhaps%20this%20wasn't%20the%20healthiest%20way%20to%20go%20about%20it.%20Now%20there%20are%20even%20more%20%22quick%22%20and%20%22easy%22%20fake%20meat%20sources.%20Just%20go%20to%20Whole%20Foods%20and%20you%20will%20see%20a%20whole%20refrigerator%20and%20%20freezer%20packed%20with%20the%20stuff.%20Veggie%20meals%20galore,%20from%20Amy's%20(not%20all%20of%20their%20items%20are%20vegan),%20Candle%20Cafe,%20Gardein,%20Kashi,%20etc.%20They%20are%20not%20cheap%20either.%20I%20won't%20say%20not%20to%20buy%20them,%20because%20I%20do%20occasionally,%20when%20I%20need%20something%20quick%20and%20it's%20on%20sale.%3C/p%3E%3Cp%3EBecoming%20vegan%20(or%20eating%20a%20completely%20plant-based%20diet),%20is%20more%20of%20a%20challenge.%20I%20used%20to%20love%20cheese%20and%20yogurt.%20And%20now%20I%20don't%20really%20crave%20them%20anymore.%20Your%20body%20gets%20used%20to%20it.%20Besides,%20if%20you%20really%20want%20it,%20the%20non-dairy%20industry%20has%20really%20changed%20a%20lot%20in%20the%20past%20few%20years.%20There%20are%20several%20non-dairy%20yogurts%20you%20can%20buy%20(yes,%20they've%20got%20the%20cultures!).%20Some%20made%20with%20soy,%20others%20with%20coconut%20milk.%20There's%20even%20non-dairy%20ice%20cream!%20And%20that%20stuff%20is%20delicious.%20Mind%20you,%20I%20don't%20eat%20it%20all%20the%20time.%20It's%20high%20calorie,%20high%20fat,%20and%20high%20sugar,%20like%20regular%20ice%20cream.%20Though%20it's%20made%20with%20healthier%20ingredients.%20I%20was%20never%20really%20an%20egg%20person,%20but%20there%20are%20substitutions%20you%20can%20make%20when%20you're%20baking.%20As%20for%20eating,%20lots%20of%20vegans%20make%20scrambled%20tofu.%20It's%20very%20popular.%3C/p%3E%3Cp%3EThere%20are%20so%20many%20non-dairy%20milks%20out%20there,%20I%20couldn't%20possibly%20name%20them%20all.%20They're%20made%20from%20nuts,%20hemp,%20rice,%20oats,%20soy,%20etc.%3C/p%3E%3Cp%3ESo%20you%20see,%20there's%20not%20really%20a%20lack%20of%20food%20out%20there%20for%20those%20of%20us%20on%20a%20plant-based%20diet!%20And%20in%20time,%20you'll%20learn%20to%20make%20your%20own%20foods%20too,%20instead%20of%20buying%20them%20pre-packaged%20in%20the%20store.%3C/p%3E%3Cp%3EHere%20is%20a%20list%20of%20staples%20that%20I%20keep%20(not%20all%20of%20them%20all%20the%20time,%20I%20try%20to%20vary%20the%20fruits%20and%20vegetables)%20in%20my%20kitchen.%3C/p%3E%3Cp%3EWatch%20out%20for%20the%20%22dirty%20dozen%22%20in%20the%20case%20of%20fruits/vegetables.%20Those%20items%20you'll%20want%20to%20buy%20organic,%20if%20you%20can.%3C/p%3E%3Cp%3EVegetables:%20kale,%20spinach,%20zucchini,%20carrots,%20onions,%20potatoes,%20sweet%20potatoes,%20celery,%20cucumbers,%20ginger,%20beets,%20cabbage,%20peppers,%20there%20are%20limitless%20options!%3C/p%3E%3Cp%3EFruit:%20apples,%20pears,%20lemons,%20limes,%20frozen%20berries,%20bananas,%20peaches,%20nectarines,%20tomatoes,%20avocados,%20dates,%20dried%20fruit,%20also%20limitless%20options!%3C/p%3E%3Cp%3EOther%20items:%3C/p%3E%3Cp%3EThis%20is%20not%20a%20complete%20list,%20but%20you%20get%20the%20idea.%20If%20I%20forget%20something,%20I'll%20come%20back%20and%20add%20it%20to%20the%20list.%3C/p%3E%3Cp%3EMost%20of%20these%20things%20are%20easy%20to%20cook.%20I%20highly%20recommend%20a%20rice%20cooker%20(Zojirushi)%20for%20cooking%20rice%20and%20whole%20oat%20groats.%20You%20can%20set%20them%20to%20be%20ready%20at%20a%20certain%20time.....breakfast%20or%20dinner!%20There%20are%20great%20recipes%20out%20there%20for%20raw,%20soaked%20buckwheat%20or%20oat%20groats%20as%20breakfast%20oatmeal.%20Though%20you%20can%20easily%20cook%20up%20quick%20oats%20for%20breakfast%20too%20(S%20eats%20those%20every%20morning).%20%20Other%20handy%20appliances%20are:%20a%20food%20processor,%20juicer%20(Breville),%20and%20a%20highspeed%20blender%20(Vitamix).%3C/p%3E%3Cp%3EMany%20products%20contain%20dairy%20ingredients.%20See%20here%20for%20a%20pretty%20good%20list%20of%20ingredients%20that%20are%20made%20from%20dairy.%20Even%20some%20cheeses%20that%20are%20made%20from%20soy%20or%20rice%20have%20CASEIN%20in%20them%20(this%20is%20a%20dairy%20product!).%20Watch%20out%20for%20those.%20Some%20soy%20yogurts%20also%20contain%20casein.%20Read%20the%20label!!%20(don't%20worry,%20you'll%20eventually%20learn%20what%20products%20you%20can%20eat,%20without%20looking%20at%20the%20label%20single%20every%20time)%3C/p%3E%3Cp%3EI've%20learned%20to%20read%20labels.%20A%20lot.%3C/p%3E%3Cp%3EWhatever%20the%20reason%20is.....you%20love%20animals,%20you'd%20like%20to%20be%20healthier.......choosing%20a%20plant-based%20diet%20is%20an%20amazing%20choice!%20Good%20for%20you%20for%20even%20thinking%20about%20it.%3C/p%3E%3Cp%3EI%20lost%20about%2050%20pounds%20after%20becoming%20vegetarian.%20And%20after%20transitioning%20over%20to%20a%20totally%20plant-based%20diet,%20I%20lost%20another%2030!%20That's%2080%20pounds%20lost!!!%20So%20yes,%20that's%20another%20plus.%20My%20cholesterol%20numbers%20went%20down%20too!%20You%20can%20do%20it.%3C/p%3E%3Cp%3EThere%20are%20so%20many%20vegan%20cookbooks%20out%20there%20now.%20Just%20go%20to%20Amazon....they%20are%20all%20listed%20there.%3C/p%3E%3Cp%3EPS-if%20you%20are%20also%20gluten%20free,%20or%20have%20other%20allergies,%20there%20are%20also%20tons%20of%20blogs%20out%20there%20for%20you!%3C/p%3E%3Cp%3ETomorrow:%20Easy%20first%20vegan%20meal/snack%20ideas.%3C/p%3E%3Cp%3EPLEASE%20don't%20hesitate%20to%20ask%20questions%20if%20you%20need%20help%20with%20your%20transition.%20I'm%20here%20to%20help,%20since%20I've%20already%20been%20through%20that%20phase.%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
