Herb Lentils with Veggies

I'm not normally a lentil fan, but I will definitely be eating this again.

Ingredientes

  • 1 c lentils (I used green lentils)
  • 2 c water
  • 2 T olive oil
  • 1 small shallot, diced
  • 1- 9 o.z. package baby spinach
  • 1/2 pint grape tomatoes, halved
  • 1/4 c fresh basil, chopped
  • 1/4 c fresh parsley, chopped
  • 1/4 c fresh mint, chopped
  • 2 T lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Direcciones

  1. Bring the water to a boil and add the lentils. Cook until the lentils are tender, about 35 minutes. Drain and and set aside.
  2. While the lentils are cooking, heat the olive oil over medium heat in a skillet.
  3. Add the shallots and cook until they are soft. Wilt in the spinach.
  4. Stir in the tomatoes, lentils, basil, parsley and mint.
  5. Stir in the lemon juice, salt and pepper.
  6. Cook until hot through, about 1 minute, and serve.
