- Combine all ingredients and blend thoroughly. (For variety, remove tarragon and sugar and substitute 1 teaspoon each of thyme and marjoram and 1/2 teaspoon oregano.
- Yield: 1 3/4 c.
- Savory Chinese Turkey Meat Marinade
- 1/2 c. soy sauce 1/4 c. water 3 Tbsp. oil 3 gloves garlic, crushed 1/2 teaspoon black pepper 2 tsp. salt 2 tsp. sugar 1 tsp. cinnamon 1/4 - 1/2 tsp. grnd cloves 1 teaspoon grnd ginger (or possibly anise)
- Mix all ingredients together well and proportionately coast surfaces of turkey parts or possibly meats. Marinate at least 4 hrs.
- Yield: 1 c.
- Marinade for Turkey Breast Cuts and Kabobs
- 1/3 c. chili sauce 2 Tbsp. lemon juice 1 Tbsp. sugar 2 bay leaves, broken up
- Combine all ingredients and spread proportionately over white turkey meat cuts.
- Marinate at least 4 hrs.
- Yield: 1/2 c.
- Lemon Barbecue Marinade
- 1/2 c. lemon juice 1/4 c. vegetable oil 1/2 teaspoon salt 1 clove garlic, mashed 1/2 teaspoon black pepper 1/2 teaspoon thyme leaves 1 teaspoon Worcestershire sauce 2 Tbsp. onion, finely minced
- Mix all ingredients and let set for 2 hrs to allow flavors to blend, BEFORE adding meat.
- Yield: 3/4 c.
