Receta Herb Marinated Green Beans

- Put parsley, basil, oregano and vinegar in a large bowl and let stand for 10-20 min. Fold in onion and garlic and let stand for another half hour to an hour.
- Rinse green beans and snap off stem ends. Drop them into boiling water just till they are beginning to soften. Drain, and add in to bowl of herbs while still warm, and mix. Let the beans marinate for at least one hour. Stir occasionally.
- Serve at room temperature, adding the extra virgin olive oil, salt and pepper immediately before serving.
