Receta Herb Pesto with Zucchini Pasta

The season of bountiful produce has certainly arrived!
One of the many things I LOVE about summer is the abundance of fresh fruits and vegetables. In the summer, my last stop for produce is the supermarket. I grow my own vegetables and I shop at farmer’s markets and farm stands.
Needless to say I was happy when I read the recipe redux challenge for this month…
“The season of bountiful produce has arrived. Whether your produce comes from the Farmers Market, a CSA share, or a plot of dirt out back, show how you are using fresh July fruits or veggies. And if you have gardening successes – or failures – please share!”
I worked hard in my garden during the spring and now I’m reaping the benefits. I have had more successes, and maybe a failure or two -like trying to control the butternut squash from taking over the entire garden. Did I mention that I am overflowing with zucchini?
The recipe that I am sharing this month is Herb Pesto with Zucchini Pasta. All of the of the ingredients except for the olive oil, and walnuts were sourced from my garden or a local farm. It doesn’t get much fresher than that!
Zucchini Pasta with Herb Pesto Sauce
INGREDIENTS
- 2 cups of assorted fresh herbs such as basil, oregano, parsley, tarragon, mint
- 2 cloves of garlic
- 1/4 cup walnuts
- ¼ cup olive oil
- 1 tablespoon olive oil - to sauté zucchini
- 1/8 to ¼ cup grated fresh parmesan cheese
- 1 medium to large zucchini
INSTRUCTIONS
Add the garlic to a food processor and process until coarsely chopped
Add the walnuts and process until coarsely chopped
Next, add the herbs and process until coarsely chopped
Pour in the olive oil and process for a few seconds more
Last- add the cheese and process until will combined
Set pesto aside
With a julienne peeler shred the zucchini to make zucchini pasta
Heat 1 tablespoon olive oil in a sauté pan over medium heat
Add the zucchini noodles and toss in pan
Add 2 tablespoon of pesto mixture and combine well – continue adding pesto mixture until desired taste and consistency
Sprinkle with fresh grated Parmesan cheese if desired
* to make this vegan, substitute cheese with nutritional yeast
