Ingredientes

  • 1/4 c. extra-virgin extra virgin olive oil
  • 2 Tbsp. freshly-squeezed lemon juice Coarse salt to taste Freshly-grnd black pepper to taste
  • 4 c. fresh flat-leaf parsley - (packed)
  • 2 1/2 c. fresh mint leaves - (packed) (preferably spearmint)
  • 1 c. crumbled feta cheese - (5 ounce)
  • 24 x Kalamata olives pitted

Direcciones

  1. In a small bowl, make the dressing: Whisk together extra virgin olive oil, lemon juice, and salt and pepper to taste.
  2. In a large bowl, combine the flat and curly-leaf parsley and the mint. Drizzle with dressing, and toss to combine. Garnish with cheese and olives.
  3. Serve this dish immediately so which each flavor stands out more distinctly.
  4. This recipe yields 4 to 6 servings.
