Receta Herbed Corn and Bean Salad
Snacking should be as good as breakfast. Many nutritionists, also consider it to be an important meal of the day. To maintain your energy levels and blood sugar level, snacking is a must. If you go without food and get hungry between meals, these instabilities occur and even your mood levels might tend to swing. It also raises the risk of over eating the main meals. In order to have a hale and healthy lifestyle, one should nosh. So this week, the three dishes are going to be light meals that you can savour. So we will start this with a healthy note. Finding a nutritious snack option amidst the umpteen attractive(not so healthy) choices is an herculean task because a general understanding is that , snacks should be tasty, something easy to munch and especially a grab and go rather than something that could be enjoyed at the table. But once in a while, especially for kids you can try some healthy options. A mixed bean salad is a perfect filler between lunch and dinner and also a balanced choice of snacking.
Herbed Corn and Bean Salad
A summer feel salad with beans and corn flavoured with fresh herbs of your choice.
Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2
Ingredients
- 1 Cup Kidney Beans
- 1/2 Cup Corn kernels (fresh or frozen)
- 1 Medium sized onion, finely chopped
- 1/2 Cup finely chopped raw mango
- 1/2 tsp Cumin powder
- 1 tsp Red chilli powder
- 1/2 tsp Chaat masala (optional)
- Handful of finely chopped mixed herbs (your choice - mint, coriander leaves, parsley, dill)
- 1/2 Tbsp Olive oil
- 2 Tbsp or more Lime juice
- Salt and pepper to taste
Instructions
Pressure cook the kidney beans with little salt added to it. Drain the water and keep this aside.
Steam or sear the corn kernels.
Mix everything in a bowl. Check for seasoning and adjust.
Serve immediately.
Notes
Add any herbs you like. Start in very little quantity and add more if only needed. The herbs flavour will be very strong and should not overpower it.
