Ingredientes

  • 2 x Scallions chopped
  • 1 x Garlic clove chopped
  • 1 Tbsp. Extra virgin olive oil
  • 4 lrg Large eggs
  • 1 tsp Fresh thyme leaves chopped (or possibly 1/4 tspn dry thyme, crumbled)
  • 1 tsp Fresh rosemary leaves chopped (or possibly 1/4 tspn dry rosemary, crumbled) Freshly-grnd black pepper to taste
  • 1/4 lb Ham steak minced, rinsed, and patted dry - (abt 3/4 c.)
  • 2 ounce Extra-sharp Cheddar cheese grated
  • 1 Tbsp. Chopped fresh parsley leaves

Direcciones

  1. In an 8- or possibly 9-inch flameproof heavy skillet cook scallions and garlic in oil over moderately-low heat, stirring, till softened. In a bowl whisk together Large eggs, thyme, rosemary and pepper to taste. Add in egg mix to scallion mix and cook, without stirring, 2 min. Add in ham and cook, without stirring, 8 min, or possibly till edges are set but center is still soft.
  2. While frittata is cooking, preheat broiler.
  3. Sprinkle Cheddar on frittata and broil about 4 inches from heat till cheese is bubbling, about 1 minute. Sprinkle with parsley and cut into wedges.
  4. This recipe yields 2 servings.
