Herbed Pork Tenderloin With OvenRoasted Potatoes

Ingredientes

  • 1/3 c. extra virgin olive oil
  • 2 garlic cloves, chopped
  • 2 teaspoon dry rosemary leaves, crushed
  • 2 teaspoon dry thyme leaves, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 whole pork tenderloins (3/4 to 1 pound each)
  • 2 1/2 lbs. new potatoes, quartered

Direcciones

  1. Heat oven to 375 degrees.
  2. Stir oil, garlic and seasonings; coat meat with 3 Tbsp. of seasoning mix.
  3. Place in large roasting pan.
  4. Toss potatoes with remaining seasoning mix; arrange around meat in pan.
  5. Roast 35 to 40 min or until meat thermometer registers 155 degrees and juices run clear, stirring potatoes after 20 min.
  6. Broil on top rack of oven 5 min to brown.
  7. Let stand 5 min before slicing.
