Ingredientes

  • 10 ounce. sm. red potatoes (about 6)
  • 1 tbsp. extra virgin extra virgin olive oil
  • 1/4 teaspoon grated lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly grnd pepper
  • 1 tbsp. chopped fresh mint
  • 1 teaspoon chopped fresh parsley

Direcciones

  1. Heat oven to 350 degrees. Scrub potatoes; slice 1/4 inch thick. Combine potatoes with oil, lemon zest, salt, and pepper. Divide potatoes between 2 pcs of aluminum foil. Fold foil to make air- tight pkgs.. Bake till tender, about 20 min. Sprinkle potatoes with herbs and quickly toss. Serve warm. Serves 2 (195 calories per serving).
