Receta Hoisin Chicken Stir Fry {Low Carb}
This Hoisin Chicken Stir-fry is perfectly balanced, savory and light.

- For the Hoisin Sauce
2 Tablespoons smooth peanut butter 1 Tablespoon Swerve Sweetener ¼ cup soy sauce 1 Tablespoon Rice Vinegar 1 teaspoon Sesame Oil 1 teaspoon Sriracha sauce ¼ teaspoon garlic salt For the Chicken Stir fry 16 ounces boneless skinless chicken breasts, cut into bite sized pieces 1½ Tablespoons canola or peanut oil 2 cloves garlic, thinly sliced 1 small piece ginger, cut into julienne (matchsticks) 1 bunch bok choy, trimmed, roughly chopped 2 small sweet red pepper seeded, thinly sliced 2 small sweet yellow pepper, seeded, thinly sliced 2 scallions, thinly sliced on the diagonal
For the sauce Heat the peanut butter in the microwave until soft (about 30 to 45 seconds) Combine the softened peanut butter with the rest of the sauce ingredients and whisk. Set aside. Season the chicken with salt and pepper. Place chicken and 2 tablespoons hoisin sauce in a large bowl. Stand at room temperature for 15 minutes to marinate. Heat 1 tablespoons oil in a large skillet over high heat. Add chicken and stir-fry for 4 minutes or until golden. Transfer to a plate. In the pan add the remaining oil. Add garlic and ginger, then stir-fry for 2 minutes or until garlic is light golden. Add bok choy and red and yellow peppers, then stir-fry for 2 minutes. Return chicken to skillet Add the remaining hoisin sauce. Stir-fry for a further 3 minutes or until chicken is cooked through and vegetables are tender. Top with the sliced scallions. Serve. A few days ago I was on my way to visit my parents in the City.
When I arrived, mom lead me into the kitchen to show me an abundance of sweet peppers. She promptly told me that I needed to take them home with me. “Dad doesn’t like sweet peppers”, she announces.
Dad proceeds to tell me, how it’s not that he doesn’t like them, but more that his stomach doesn’t want them. Ha ha. Leave it to dad to twist the truth.
Anyway, on my drive home, I decided that another stir-fry was in order.
The beautiful colors of the peppers and an incredible homemade hoisin sauce that is out of this world.
It’s a good thing dad’s stomach can’t handle peppers.
