- 7 oz good quality candied fruit (candied orange, squash, & cherries)
- 1 1/2 cups of flour1 tsp kosher salt2 1/2 tsp of baking powder
- confectioners sugar for dusting

.%3C/p%3E%3Cp%3EI%20love%20a%20good%20fruitcake,%20filled%20with%20nuts%20and%20spices%20and%20good%20candied%20fruit,%20if%20you%20can%20find%20good%20!!!%20(also%20known%20as%20%22Fruit%20Glac%C3%A9%22%20in%20France,%20and%20%22Frutti%20Candita%22%20in%20Italy.%3C/p%3E%3Cp%3EThe%20title%20of%20the%20cake%20is%20in%20Italian,%20only%20because%20I%20used%20my%20special%20stash%20of%20Italian%20glazed%20candied%20fruit%20(frutti%20candita)%20that%20I%20brought%20back%20in%20my%20luggage%20on%20my%20last%20trip%20to%20Venice.%3C/p%3E%3Cp%3EI%20have%20had%20it%20over%20a%20year%20wrapped%20in%20the%20fridge,%20using%20it%20oh%20so%20sparingly.%3C/p%3E%3Cp%3EWhat%20am%20I%20saving%20it%20for?%3C/p%3E%3Cp%3EThe%20time%20is%20now.%20%20%20Enjoy%20your%20life!%3C/p%3E%3Cp%3EUse%20that%20candied%20fruit%20in%20the%20back%20of%20the%20fridge,%20damn%20it!%3C/p%3E%3Cp%3EI%20made%20a%20luxurious%20ricotta%20cake%20and%20added%20the%20special%20confections.%20%20%20I%20used%20candied%20whole%20Sicilian%20clementines,%20red%20&%20green%20cherries%20and%20candied%20zucca%20(some%20sort%20of%20square%20of%20pale%20colored%20squash,%20which%20I%20diced%20up).%20%20%20I%20also%20added%20in%20dark%20and%20golden%20raisins.%3C/p%3E%3Cp%3EOf%20course%20I%20know%20it%20is%20impossible%20to%20get%20this%20kind%20of%20fruit%20in%20the%20States.....I%20have%20tried%20without%20any%20luck.%20%20When%20lockdown%20is%20over,%20first%20thing%20I%20am%20doing%20is%20going%20to%20Italy%20to%20buy%20more%20of%20this%20goodness.%20%20:)%3C/p%3E%3Cp%3EThis%20would%20be%20the%20perfect%20cake%20for%20the%20holidays......and%20you%20could%20always%20glaze%20the%20fruit%20yourself!!!%20%20%20(just%20a%20thought).%3C/p%3E%3Cp%3EHere%20is%20how%20I%20made%20it:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20toss%20the%20candied%20fruit%20with%20confectioners%20sugar%20(about1/4%20cup).%20%20This%20will%20prevent%20the%20fruit%20from%20sticking%20together.%3C/p%3E%3Cp%3EWith%20a%20paddle%20attachment%20of%20a%20mixer%20(or%20your%20muscles),%20beat%20the%20sugar%20with%20butter%20and%20extracts%20for%202%20minutes.%3C/p%3E%3Cp%3EAdd%20in%20the%20eggs,%20one%20at%20a%20time,%20then%20add%20in%20the%20zests%20and%20ricotta%20cheese.%3C/p%3E%3Cp%3ESlowly%20add%20in%20the%20dry%20ingredients.%20You%20don't%20want%20to%20overmix%20the%20batter.%3C/p%3E%3Cp%3EAdd%20in%20the%20raisins%20and%20the%20candied%20fruit%20and%20mix%20together.%20%20The%20batter%20will%20be%20very%20thick.%3C/p%3E%3Cp%3EYou%20can%20bake%20this%20in%20a%209%22%20round%20pan%20or%209%22%20loaf%20pan,%20buttered%20and%20lined%20with%20parchment%20paper.%3C/p%3E%3Cp%3EBake%20at%20350F%20for%2020%20minutes,%20then%20turn%20the%20oven%20down%20to%20325F%20and%20bake%20for%2030%20minutes%20more.%3C/p%3E%3Cp%3ELet%20rest%20a%20few%20minutes%20in%20the%20pan%20before%20removing%20to%20a%20cooling%20rack.%3C/p%3E%3Cp%3EDust%20with%20confectioner's%20sugar.%3C/p%3E%3Cp%3EThis%20cake%20stays%20MOIST%20for%20days%20and%20freezes%20beautifully.%3C/p%3E){kind=link}
