Holiday Coins
Ingredients:
- 2 cups flour
- 1/2 teaspoon salt
- 3/4 cup unsalted butter-softened
- 3/4 cup sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- Decorator's sugar
Directions:
In a mixing bowl, beat the butter on medium speed for about 1 minute or until creamy. Add sugar; beat 2 more minutes. Beat in the egg yolks and vanilla until combined. Beat in the flour and salt. Divide dough in half and roll each of the halves into a log about 1" in diameter. Pour the decorator's sugar into a shallow bowl and roll the dough in it. Wrap in plastic wrap and refrigerate for at least 2 hours.
Preheat oven to 350 degrees. Unwrap the logs and cut into 1/4 " pieces. Place on an ungreased cookie sheet (I used a Silpat liner). Bake for 12-14 minutes or until golden around the edges. Transfer to a cooling rack.
