Holiday Nut Roll (Czech)

Ingredientes

  • 1 c. scalded lowfat milk
  • 1/2 c. butter
  • 1/2 c. sugar
  • 1 teaspoon salt
  • 2 Packages yeast dissolved in 1/4 c. hot water + 1 teaspoon sugar
  • 2 beaten Large eggs
  • 4 1/2 c. flour

Direcciones

  1. To make the dough, combine warm lowfat milk with butter, sugar and salt. Cold. Add in yeast mix. Stir in Large eggs and flour and mix to a soft dough. Knead till smooth and elastic, adding more flour as necessary till you cannot add in any more flour. Turn into a well greased bowl, cover and let rise till double, about 1 1/2 to 2 hrs in a hot place.
  2. Punch dough down and divide into 2 portions. On lightly floured surface, roll out each portion into 15"x12" rectangle, 1/4" thick. Spread each rectangle with half the filling, leaving an inch margin all the way around the edges. Roll up jelly roll fashion and place seam side down on greased baking pan. Cover and let rolls rise again. Bake 35 min in oven preheated to 350 degrees.
  3. Crust will be dark but soft, especially if you brush it with melted butter when you remove it from the oven.
  4. FILLING: While the dough is rising the first time, make the filling. In a large, heavy saucepan, combine nuts, lowfat milk, sugar, butter and honey. Add in a little of the warm mix to the Large eggs and combine thoroughly. Whisk egg mix into warm mix and cook till thickened, stirring constantly. Cold. Makes 2 large long loaves. Traditional Czechoslovakian holiday treat.
