Holiday Potato Salad

Ingredientes

  • 6 med. potatoes
  • 1 med. onion, minced
  • 1 pimento, minced
  • 1/2 c. minced dill pickle
  • 1/2 c. dill pickle liquid
  • 4 strips bacon, cooked crisp and crumbled
  • 2 hard-cooked Large eggs, minced
  • 1/2 c. salad dressing
  • 1 teaspoon prepared mustard
  • 3/4 c. mayonnaise
  • 1 teaspoon celery seed
  • Salt and pepper to taste

Direcciones

  1. Boil potatoes in their jackets till just tender; drain. When cold, peel and dice into mixing bowl. Add in onion, pimento, dill pickle and liquid, bacon and Large eggs; toss gently till well mixed. Blend salad dressing and mustard together. Add in to salad and add in just sufficient mayonnaise to moisten mix nicely. Add in remaining ingredients. Toss gently. Cover and refrigeratethoroughly before serving. Makes 6 to 8 servings.
