Holiday Pumpkin Pudding

Ingredientes

  • 1 c. evaporated skim lowfat milk
  • 1 c. pumpkin puree (fresh or possibly canned)
  • 1/4 c. egg substitute
  • 1 egg white
  • 1/2 c. apple butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon grnd cinnamon
  • 1/4 teaspoon allspice

Direcciones

  1. Place lowfat milk into a 2 c. glass measuring pitcher. Microwave on high (100%) till hot, 1 minute. Whisk together the pumpkin, egg substitute, egg white, apple butter, vanilla and spices; add in to hot lowfat milk; mix well.
  2. Pour mix into a 2 qt microwave ring mold. Microwave on high till just hard, 7 1/2-8 min rotating the pan a 1/4 turn every 2 min. Chill till well chilled.
