Holiday Pumpkin Treats
I love Mincemeat~ I always have~ I can remember when I was a child, I would wait for a piece of Mincemeat pie at Thanksgiving~I would sit at the "Grown Up" table, and have a piece of Mincemeat pie while my cousins would sit at the "kiddie" table, eating Pumpkin pie~ This recipe is one of my favorites~ I have been making this dessert for as long as I can remember~
- 1-3/4 c all-purpose flour
- 1/3 c firmly packed brown sugar
- 1/3 c sugar
- 1 c (2 sticks) cold butter
- 1 c chopped walnuts
- 1 jar (27-oz) None-Such Ready-to-Use Mincement
- 1 (15 oz) can pumpkin (2 cups)
- 1 (14 oz) can Eagle Brand Sweetened Condensed Milk
- 2 eggs
- 1 t ground cinnamon
- 1/2 t ground allspice
- 1/2 t salt
Preheat oven to 425. Combine flour, and sugars; cut in butter until crumbly. Stir in nuts. Reserving 1 1/2 cups crumb mixture, press remaining crumb mixture on bottom and half way up sides of 13x9x2 inch baking dish. Spoon mincemeat over crust. Combine remaining ingredients except reserved crumb mixture; mix well. Pour over mincemeat. Top with reserved crumb mixture. Bake 15 mins; reduce oven to 350. Bake 40 mins longer or until golden brown around edges. Cool. Cut into squares. Store warm or at room temperature. Store leftovers covered in refrigerator.
