%20Cherry-Almond%20Walnut%20Crisp%20from%20our%20recent%20cherry%20picking%20expedition.%20Since%20ice%20cream%20pairs%20naturally%20with%20fruit%20crisp,%20we%20decided%20to%20make%20it%20too.%20I%20perused%20the%20web%20and%20a%20few%20cookbooks%20and%20settled%20on%20Mark%20Bittman%E2%80%99s%20French%20vanilla.%20Custard-based%20with%20a%20half%20dozen%20eggs%20and%20three%20cups%20of%20half-and-half,%20it%20was%20decadent,%20rich,%20creamy,with%20a%20wonderfully%20smooth%20texture,%20not%20at%20all%20icy%20like%20some%20homemade%20ice%20creams.%20The%20color%20was%20much%20more%20yellow%20and%20the%20vanilla%20flavor%20more%20intense%20than%20any%20commercial%20ice%20cream.%20But%20preparing%20it%20was%20indeed%20a%20labor%20of%20love,%20between%20whisking%20the%20egg%20yolks,%20heating%20the%20cream%20slowly%20to%20175%20degrees,%20and%20then%20chilling%20it%20even%20more%20slowly%20to%2040%20degrees%20before%20putting%20it%20in%20the%20ice%20cream%20maker.%20Everyone%20at%20the%20party%20loved%20it%20and%20couldn%E2%80%99t%20believe%20we%20made%20it.%20Bittman%20suggests%20add-ins%20such%20as%20maple%20syrup,%20coffee,%20or%20chocolate%20chips,%20which%20may%20be%20fun%20next%20time%20we%20make%20it.%20And%20it%20doubles%20well.%20A%20wonderful%20summer%20indulgence.%3C/p%3E%3Cp%3EBasic%20French%20Vanilla%20Ice%20Cream%3C/p%3E%3Cp%3EAdapted%20from%20Mark%20Bitten%3C/p%3E%3Cp%3ESplit%20the%20vanilla%20bean%20in%20half%20and%20scrape%20out%20the%20seeds.%20Reserve%20the%20bean%20for%20making%20vanilla%20sugar%20(see%20below).%3C/p%3E%3Cp%3ECombine%20the%20seeds%20with%20the%20half-and-half%20and%201/4%20cup%20sugar%20in%20a%20small%20saucepan.%20Heat,%20stirring%20occasionally,%20until%20steam%20arises%20from%20the%20milk.%20Remove%20from%20the%20heat.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20beat%201/4%20cup%20sugar%20with%20the%20egg%20yolks%20until%20the%20mixture%20is%20light%20yellow%20and%20thick,%20about%20four%20minutes.%3C/p%3E%3Cp%3EBeat%201/2%20cup%20hot%20half-and-half%20into%20the%20egg%20mixture,%20then%20gradually%20stir%20this%20mixture%20into%20the%20saucepan%20with%20the%20remaining%20half-and-half.%20Cook%20over%20medium-low%20heat,%20stirring%20almost%20constantly,%20until%20the%20mixture%20reaches%20175%20to%20180%20degrees%20or%20is%20slightly%20thickened.%20Do%20not%20boil.%20There%20will%20be%20a%20thick%20coating%20on%20the%20back%20of%20a%20spoon%20that%20will%20hold%20the%20outline%20of%20your%20finger%20after%20you%20pass%20it%20through.%3C/p%3E%3Cp%3EStir%20in%20the%20remaining%20half-and-half.%20If%20using%20vanilla%20extract,%20add%20it%20now.%20Chill%20to%2040%20degrees.%20To%20hasten%20the%20chilling%20process,%20set%20the%20bowl%20in%20a%20large%20bowl%20filled%20with%20a%20mixture%20of%20ice%20and%20water,%20stirring%20occasionally.%3C/p%3E%3Cp%3EChurn%20chilled%20mixture%20in%20an%20ice%20cream%20maker%20according%20to%20the%20manufacturer%E2%80%99s%20directions.%20Serve%20immediately%20or%20freeze.%20Use%20within%20two%20days,%20%E2%80%9Cwarming%E2%80%9D%20in%20the%20frig%20for%20about%2030%20minutes%20before%20serving.%20This%20assumed%20it%20isn%E2%80%99t%20eaten%20immediately.%3C/p%3E){kind=link}
