Homemade Larabars
Last night I finished the rainbow cookies, but I haven’t cut them up yet. That cake is huge and very intimidating. After I put the chocolate on the top of the cake I put it back in the fridge and decided to make another, healthier dessert. I have been very intrigued by this recipe on Chocolate Covered Katie to make a sort of homemade Larabars. I love Larabars because they have 3 or 4 ingredients and that’s it. What granola bar has that short of a list???? I switch between those and Luna bars for my after school snack (after closely looking at the ingredients list from a few other granola bars and deciding they had to go).
Anyways, Katie has a TON of variations of the Larabars, that she has called “babies”. I decided to go with the “Chocolate Fudge Babies”. I made two versions, one with and one without Dark Chocolate Chunks (from Whole Foods, 70% Cacao).
They are amazing and taste just like cookie dough..but they are raw (meaning no animal products AND it doesn’t require cooking).
To make these all you need are:
- 1 1/3 cups dates (pitted)
- 1/4 cup walnuts
- 1 tsp pure vanilla extract
- 2 tsp cocoa powder
- 2 tbs dark chocolate chunks (optional)
Put it all in a food processor and mix it up. Roll into balls or bars.
There are SO many different types of variations that you can make. These are just my first time making these and they were SO easy. Next time I will have to get creative. Be sure to check out Katie’s page to see all the different types of “babies” she has come up with!
These can make a great present or dessert for a party, warm them up and throw them on top of some ice cream! I’ll be posting rainbow cookie recipe one day this week, so stay tuned.
