I have had this recipe in my collection for years and made it for the second time this weekend, adjusting a few of the ingredients.

Normally I make lasagna the old fashioned way in the oven. This is Slow Cooker Monday though and since this recipe is just super awesome~quoting my daughter here, I decided to cook it this way instead.

This is a wonderful dish to make for the upcoming Christmas holiday. It is a bit time consuming...due to the steps you have to do beforehand. However, if you do the prep work the evening before, it should cut down on time.

I had some chopped up zucchini left from a previous recipe, so I added it in this one. If you prefer your lasagna sauce without veggies, feel free to leave em' out.

This recipe is going into our family favorite file....because it rocks. Period.

Homemade Lasagna

(serves 8-10)

Ingredients:

Directions:

1. In a skillet, cook beef, onion, and garlic over medium heat until meat is no longer pink. Drain.

2. Add the tomato sauce, water, tomato paste, salt, oregano, Italian Seasoning, basil, and sugar. Stir and mix well.

3. Combine the three cheeses in a big bowl. Mix well.

4. In an ungreased 5-qt. slow cooker, spread a fourth of the meat sauce on the bottom. Followed by a third of the noodles...breaking them up if need be. Spoon a third of the cheese mixture on top of the noodles.

5. Repeat the layers twice, ending with the last of the meat sauce.

6. Cover and cook on low for 5 hours. Sprinkle some mozzarella cheese on top if desired.

**Libby's Notes: There is no need to pre-cook the noodles before hand. Just place them in the slow cooker dry. The liquid from the sauce and the meat will help them cook.
