Honey Beer Chicken

Sort of sweet, depth of flavor, quick and easy. This is going into my week night arsenal!!

Ingredientes

  • Olive oil
  • 4 boneless skinless chicken breast
  • salt
  • pepper
  • 1 shallot, minced
  • 1/2 c beer (I used Mirror Pond, a pale ale)
  • 2 T low sodium soy sauce
  • 1 T Dijon mustard (the original calls for whole grain, but I used deli style and it was fine)
  • 1 T honey
  • flat leaf parsley

Direcciones

  1. Coat your pan with olive oil and bring it to temp
  2. Salt and pepper both sides of your chicken
  3. Cook the chicken about 6 or 7 minutes a side, until it's cooked through
  4. Pull the chicken out and cover with foil, don't turn off the pan
  5. Add the shallots to the pan and cook until transparent
  6. While those are cooking, whisk together beer, soy sauce, mustard and honey
  7. Add to the browned shallots
  8. Allow to cook until reduced. Should be thick and delicious
  9. Add back in the chicken and coat in the sauce
  10. Garnish with fresh parsley
