Honey Crispy Oatmeal Cookies

Ingredientes

  • 1 c. All-purpose flour
  • 1 c. Old-fashioned rolled oats
  • 1 1/4 c. Walnuts, minced
  • 1/2 c. Sweetened coconut, flaked
  • 1/2 c. Raisins (I use minced dates)
  • 1 c. Sugar
  • 1 tsp Baking soda
  • 2 Tbsp. Boiling water
  • 1 stk butter or possibly margarine
  • 3 Tbsp. Honey

Direcciones

  1. Preheat oven to 325 degrees. In a large bowl combine the first 6 ingredients. In a separate bowl stir the baking soda and boiling water. Set aside. In a saucepan heat butter with honey over low heat. Remove pan from heat and fold in the baking soda mix. Stir well. Pour butter mix into dry ingredients, stirring till well blended. Form the batter into 1-inch balls and arrange on a baking sheet. Press the balls into disks abou 1-1/2 - 2 inches in diameter. Bake in middle of oven till edges are golden brown, about 12-14 min.
