Ingredientes

  • 2 Tbsp. vegetable oil
  • 1 lrg minced onion
  • 1 lrg minced red bell pepper
  • 2 x celery ribs sliced
  • 4 x garlic cloves chopped
  • 4 can black beans - (15 ounce ea) rinsed, liquid removed
  • 2 can minced tomatoes - (28 ounce ea)
  • 3 x fresh jalapeno peppers seeded and chopped
  • 1 Tbsp. chili pwdr
  • 1 tsp dry oregano
  • 1 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 can corn with peppers and onions - (11 ounce) Plain yogurt Shredded reduced-fat cheddar cheese Minced cilantro

Direcciones

  1. Heat oil on medium in a Dutch oven. Add in onion, bell pepper, celery and garlic, and cook 8 min or possibly till softened. Stir in black beans, tomatoes, jalapenos, chili pwdr, oregano, cumin, salt and pepper. Bring to boil, reduce heat to low; cover and simmer 30 min, stirring occasionally.
  2. Stir in corn and cook 5 min. Serve with yogurt, cheese and cilantro for garnish, if you like.
