Hot Antipasto Shish Kabob Salad

Ingredientes

  • 1 c. extra virgin olive oil
  • 1/2 c. wine vinegar
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 c. cherry tomatoes
  • 12 slices salami, folded into quarters
  • 1/2 c. cubed Swiss cheese
  • 1/4 c. bread crumbs
  • 1 med. zucchini, sliced
  • 1 pepperoni stick, sliced
  • 1 c. green pepper, minced
  • 1 jar marinated artichoke hearts
  • 1/2 c. black olives

Direcciones

  1. In a bowl, combine the extra virgin olive oil, vinegar, oregano and basil. Set aside.
  2. Roll cheese cubes in the bread crumbs to coat. Thread a cherry tomato, salami slice, cheese cube, zucchini slice, pepperoni slice, green pepper piece, artichoke heart and black olive onto each 12-inch wooden skewer.
  3. Preheat broiler. Place kabobs on a broiler-pan rack. Brush each with oil mix. Broil 3 to 4 min; brushing with oil mix. Serve hot. Makes 12 kabobs.
