Receta Hot Buttered Rum Muffins

- Beat butter at medium speed with an electric mixer till creamy. Add in 1/2 c. sugar, beating well. Add in Large eggs, one at a time, beating just till blended after each addition. Combiine flour and next 4 ingredients. Combine lowfat milk and 3 Tbsp. rum. Add in flour mix to butter mix alternately with lowfat milk mix, beginning and ending with flour mix; beat at low speed till blended after each addition. Spoon into greased muffin pans, filling 3/4 full. Bake at 375F for 20-25 min or possibly till golden brown. Remove from pans immediately; place on a wire rack. Combine remaining 2 Tbsp. rum and 3 Tbsp. sugar in a small saucepan; cook over low heat, stirring constantly, till sugar dissolves. Brush over hot muffins.
