,%20is%20a%20ballerina%20and%20a%20fantastic%20nail%20artist,%20but%20I%20can't%20relate%20to%20those%20things.%20Grace%20is%20a%20foreign%20concept%20to%20me%20and%20I%20have%20to%20use%20clear%20nail%20polish%20or%20I%20look%20like%20I've%20been%20trying%20to%20finger%20paint%20in%20a%20cement%20mixer.%3C/p%3E%3Cp%3EBut%20Aastha%20is%20also%20a%20passionate%20writer%20and%20baker,%20and%20those%20things%20I%20can%20relate%20to.%20For%20her%20Passion%20Project,%20a%20project%20wherein%20students%20spend%20an%20entire%20year%20exploring%20their%20personal%20passion%20and%20using%20it%20to%20improve%20or%20inform%20their%20society,%20she%20decided%20to%20create%20a%20cookbook%20of%20cupcake%20recipes%20adapted%20for%20special%20diets.%3C/p%3E%3Cp%3EShe%20also%20participated%20in%20Kitchen%20Nightmares,%20a%20week-long%20cooking%20and%20baking%20workshop%20I%20helped%20with%20at%20school.%20One%20of%20our%20activities%20that%20week%20was%20Cupcake%20Wars.%20Don't%20tell%20the%20kids,%20but%20it%20was%20kind%20of%20sneaky.%20When%20else%20does%20a%20teacher%20get%20to%20give%20students%20a%20slew%20of%20ingredients,%20sit%20back%20while%20they%20prepare%20awesome%20cupcakes,%20and%20then%20eat%20each%20of%20those%20awesome%20cupcakes%20in%20the%20name%20of%20%22judging%20the%20competition%22?%20It's%20pure%20genius.%3C/p%3E%3Cp%3EWhen%20the%20clock%20started,%20most%20of%20the%20kids%20dove%20for%20the%20chocolate,%20Oreos,%20and%20candy%20and%20dressed%20up%20some%20impressive%20cupcakes.%20They%20were%20all%20delicious.%20But%20Aastha%20and%20her%20partner%20spent%20a%20good%2030-40%20minutes%20of%20their%20time%20slaving%20over%20something%20on%20the%20stove.%20What%20in%20the%20world%20were%20they%20doing%20that%20was%20worth%20using%20up%20almost%20half%20their%20prep%20time?%3C/p%3E%3Cp%3ECaramelizing%20pineapple,%20that's%20what.%3C/p%3E%3Cp%3EI%20had%20never%20caramelized%20pineapple%20before%20and%20I%20was%20skeptical.%20I%20like%20pineapple%20or%20whatever,%20but%20I'd%20rather%20eat%20a%20lemon%20something-or-other%20any%20day%20of%20the%20week.%20So%20when%20Aastha%20and%20her%20partner%20offered%20me%20a%20quick%20taste,%20I%20prepared%20to%20exaggerate%20my%20appreciative%20reaction.%3C/p%3E%3Cp%3EUm.%20You%20guys.%20No%20exaggeration%20needed,%20as%20it%20turns%20out.%3C/p%3E%3Cp%3E%22WHAT%20DID%20YOU%20DO%20TO%20IT?%22%20I%20demanded,%20preparing%20to%20eat%20the%20rest%20of%20the%20pan%20before%20they%20could%20assemble%20their%20cupcakes.%3C/p%3E%3Cp%3E%22Caramelized%20it%20with%20some%20brown%20sugar%20and%20butter.%22%3C/p%3E%3Cp%3E%22IS%20THAT%20IT?%22%3C/p%3E%3Cp%3EThat's%20it.%20Caramelized%20pineapple%20is%20apparently%20just%20another%20way%20of%20saying%20%22THE%20BEST%20THING%20YOU'LL%20EVER%20TASTE%20except%20for%20coconut,%20because%20let's%20be%20real,%20nothing%20will%20ever%20be%20better%20than%20coconut.%22%3C/p%3E%3Cp%3EI%20promptly%20stole%20Aastha's%20idea%20and%20developed%20the%20recipe%20below%20with%20it:%20an%20incredible%20hot%20skillet%20cake%20with%20crackle%20icing%20and%20a%20huge%20pile%20of%20caramelized%20pineapple%20right%20in%20the%20middle.%20It%20does%20take%20awhile%20for%20pineapple%20to%20caramelize%20--%2040%20minutes%20on%20the%20stove%20or%20a%20couple%20of%20hours%20in%20the%20oven%20--%20but%20it's%20an%20understatement%20to%20say%20that%20it's%20worth%20it.%20Serve%20your%20hot%20cake%20and%20caramelized%20pineapple%20with%20lots%20of%20vanilla%20bean%20ice%20cream.%3C/p%3E%3Cp%3EDo%20you%20have%20a%20special%20diet%20but%20love%20cupcakes?%20Stay%20tuned,%20because%20soon%20I'll%20share%20a%20link%20to%20purchase%20Aastha's%20thoughtfully%20prepared%20cookbook!%3C/p%3E){kind=link}
