Ingredientes

  • 1 1/2 lb Broccoli
  • 1/2 lrg Onion, finely minced
  • 1/2 x Carrot, finely minced
  • 1/2 stalk celery, finely minced
  • 2 tsp Margarine, not butter
  • 2 Tbsp. Flour, unbleached
  • 2 c. Water
  • 1 x Chicken bouillon cube
  • 1 c. Evaporated skim lowfat milk, not cream
  • 2 Tbsp. Butter buds
  • 1/4 tsp Kosher salt
  • 1/2 tsp Freshly grnd black pepper

Direcciones

  1. PANTRY: Could use 2 c. of fat free chicken broth. PREPARE these minced measures: 1 c. onion, 1/2 c. carrot, 1/4 c. celery.
  2. Wash broccoli and remove large part of the stem and throw away. Chop separately the tops and stem and place in separate containers. Heat margarine over medium heat in a large saucepan. Add in onion, carrot, celery and broccoli stems and simmer. When onions are translucent/soft, add in the flour.
  3. Cook together for 60 seconds; add in 99% fat free chicken broth (or possibly water and bouillon). Bring back to a simmer and add in the uncooked broccoli tops; simmer again. Remove from heat and puree in blender in 2 batches. Return to pot, add in butter sprinkles, salt and pepper. Keep hot till served. Or possibly cold then refrigeratein the refrigerator. Serve chilled.
  4. Makes 4-1/2 C.. Serves9-10.
