,%20and%20I%20spotted%20what%20they%20called%20Scottish%20Snowball%20Cakes.%20They%20looked%20a%20lot%20like%20Whoopie%20Pies,%20but%20covered%20in%20icing%20and%20coconut.%20I%20read%20the%20packet%20and%20it%20said%20that%20they%20were%20two%20sponge%20cakes%20put%20together%20with%20raspberry%20jam%20and%20covered%20with%20a%20fondant%20icing%20and%20dessicated%20coconut.%3C/p%3E%3Cp%3EEasy%20peasy%20lemon%20squeasy!%20I%20thought%20to%20myself%20.%20.%20.%20I%20can%20do%20that!%20And%20so%20I%20came%20home%20and%20proceeded%20to%20try%20to%20replicate%20what%20I%20had%20seen,%20and%20I%20have%20to%20say%20.%20.%20.%20I%20think%20I%20did%20a%20rather%20good%20job%20of%20it,%20if%20I%20don't%20say%20so%20myself!%20*ahem*%20(Not%20to%20blow%20my%20own%20horn%20or%20anything!)%3C/p%3E%3Cp%3EOkay,%20so%20not%20having%20tasted%20the%20originals%20.%20.%20.%20I%20don't%20actually%20know%20if%20mine%20taste%20the%20same%20or%20not%20.%20.%20.%20but%20I%20can%20tell%20you%20that%20they%20are%20rather%20good.%20Of%20course%20I%20could%20just%20call%20them%20Snowball%20Drop%20Cakes%20.%20.%20.%20but%20it%20sounds%20so%20much%20nicer%20when%20you%20add%20the%20word%20Scottish%20to%20the%20front%20of%20the%20title,%20don't%20you%20think???%3C/p%3E%3Cp%3EI%20used%20the%20sponge%20recipe%20from%20my%20Be-Ro%20flour%20baking%20book%20to%20make%20the%20sponges,%20and%20the%20glace%20icing%20from%20the%20same%20book.%20I%20just%20baked%20the%20drop%20sponges%20.%20.%20.%20put%20them%20together%20with%20some%20raspberry%20jam%20(seedless),%20and%20then%20rolled%20them%20in%20the%20glace%20icing%20and%20then%20sweetened%20dessicated%20coconut.%3C/p%3E%3Cp%3EThey%20went%20down%20a%20real%20treat%20with%20a%20hot%20cup%20of%20currant%20and%20blueberry%20tea.%20This%20is%20a%20recipe%20I%20will%20repeat%20again.%20I%20did%20find%20a%20traditional%20recipe%20(after%20the%20fact)%20here.%20They%20sounded%20like%20they%20might%20be%20a%20bit%20hard%20though%20.%20.%20.%20I%20think%20I'd%20like%20my%20fluffy%20ones%20better.%3C/p%3E%3Cp%3EI%20do%20hope%20that%20you%20will%20give%20them%20a%20try.%20A%20bit%20messy%20to%20make,%20and%20somewhat%20fiddly,%20but%20well%20worth%20the%20effort%20to%20give%20your%20sweetie%20pies%20a%20snowball%20in%20July!%3C/p%3E%3Cp%3E*Scottish%20Snowball%20Drop%20Cakes*%3C/p%3E%3Cp%3EMakes%205%20(double%20cakes)%3C/p%3E%3Cp%3EDropped%20sponge%20cakes,%20sandwiched%20together%20with%20raspberry%20jam,%20coated%20in%20a%20glace%20icing%20and%20then%20rolled%20in%20dessicated%20coconut.%20A%20bit%20fiddly,%20but%20so%20worth%20the%20effort%20for%20a%20special%20occasion.%3C/p%3E%3Cp%3EFor%20the%20cakes:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/400*F/%20gas%20mark%206.%20Grease%20a%20large%20baking%20tray%20and%20dust%20with%20flour,%20shaking%20off%20any%20excess.%3C/p%3E%3Cp%3EBreak%20the%20eggs%20into%20a%20bowl%20and%20whisk%20lightly.%20Add%20the%20sugar%20and%20whisk%20until%20the%20mixture%20becomes%20thick,%20creamy%20and%20almost%20white%20in%20colour.%20This%20will%20take%20about%208%20to%2010%20minutes.%20Lightly%20fold%20in%20the%20flour.%20Place%20small%20spoonfuls,%20well%20apart,%20on%20the%20baking%20tray.%20Bake%20for%20about%205%20minutes%20until%20lightly%20browned.%3C/p%3E%3Cp%3ELet%20sit%20on%20the%20baking%20sheet%20for%20about%205%20minutes%20before%20carefully%20lifting%20onto%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20glace%20icing,%20whisk%20the%20warm%20water%20into%20the%20icing%20sugar,%20along%20with%20a%20few%20drops%20of%20vanilla%20just%20until%20you%20have%20a%20smooth%20runny%20icing.%20It%20should%20be%20thick%20enough%20to%20coat%20the%20back%20of%20a%20spoon,%20but%20drizzable.%3C/p%3E%3Cp%3ESpread%20half%20of%20the%20cooled%20cakes%20on%20the%20bottom%20sides%20with%20raspberry%20jam.%20Don't%20use%20too%20much%20or%20it%20will%20seep%20out%20the%20edges%20and%20you%20don't%20want%20that.%20You%20just%20want%20them%20stuck%20together%20nicely.%20Have%20ready%20the%20dessicated%20coconut%20in%20a%20shallow%20bowl.%20Dip%20the%20filled%20cakes%20into%20the%20icing,%20turning%20carefully%20to%20coat%20and%20gently%20lifting%20out%20with%20a%20fork.%20Drop%20into%20the%20bowl%20of%20dessicated%20coconut.%20Gently%20turn%20to%20coate%20completely%20with%20the%20coconut.%20Carefully%20place%20onto%20a%20wire%20rack%20to%20set.%20Store%20in%20an%20airtight%20container.%3C/p%3E){kind=link}
