%20Caramel%3C/p%3E%3Cp%3EIf%20you%20recall,%20I%20recently%20tried%20my%20hand%20at%20making%20goat%20cheese.%20I%20loved%20it%20but%20with%20almost%205%20gallons%20of%20goat%20milk%20remaining%20in%20the%20freezer,%20I%20had%20a%20burning%20desire%20to%20make%20something%20else%E2%80%A6and%20it%20didn%E2%80%99t%20take%20a%20lot%20of%20convincing%20for%20me%20to%20turn%20to%20Cajeta.%20Dulce%20de%20Leche%20(milk%20candy)%20is%20a%20Mexican%20confection%20that%20is%20a%20combination%20of%20milk%20and%20sugar%20cooked%20at%20low%20heat%20for%20a%20long%20time%20until%20the%20milk%20has%20evaporated%20considerably%20and%20caramelized%20and%20the%20result%20is%20a%20thick,%20golden%20caramel%20sauce.%20Cajeta%20is%20the%20same%20thing%20with%20the%20exception%20that%20instead%20of%20cow%E2%80%99s%20milk,%20goat%20milk%20is%20combined%20with%20sugar.%3C/p%3E%3Cp%3EThe%20name%20for%20cajeta%20comes%20from%20the%20Spanish%20phrase%20al%20punto%20de%20cajeta,%20which%20means%20a%20liquid%20thickened%20to%20the%20point%20at%20which%20a%20spoon%20drawn%20through%20the%20liquid%20reveals%20the%20bottom%20of%20the%20pot%20in%20which%20it%20is%20being%20cooked.%20Getting%20milk%20to%20pass%20that%20test%20requires%20some%20time%20and%20patience%20but%20is%20still%20really%20simple.%20Many%20consider%20a%20recipe%20for%20dulce%20de%20leche%20to%20consist%20of%20immersing%20a%20can%20of%20sweetened%20condensed%20milk%20in%20a%20pan%20of%20water%20that%20is%20heated%20for%20a%20period%20until%20the%20contents%20caramelize.%20I%20would%20just%20buy%20a%20container%20of%20dulce%20de%20leche%20before%20bothering%20with%20that%20effort%E2%80%A6making%20it%20yourself%20from%20scratch%20brings%20both%20the%20best%20rewards%20and%20the%20best%20flavor.%3C/p%3E%3Cp%3EI%20made%20mine%20with%20Zulka%20Cane%20Sugar%20from%20Mexico%20(seemed%20appropriate%20for%20cajeta%20right?)%20but%20I%20love%20this%20sugar%20for%20so%20many%20things%E2%80%A6especially%20my%20morning%20coffee;%20it%E2%80%99s%20a%20small%20but%20for%20me%20significant%20change%20and%20I%E2%80%99m%20certain%20it%20was%20the%20perfect%20choice%20for%20this%20homemade%20cajeta.%20The%20basic%20recipe%20is%20simply%20cornstarch,%20baking%20soda,%20milk%20and%20sugar%20but%20I%20decided%20to%20add%20some%20of%20my%20favorite%20seasoning%20(cinnamon,%20vanilla%20and%20rum)%20and%20the%20end%20result%20was%20perfectly%20wonderful.%20If%20you%E2%80%99ve%20yet%20to%20discover%20vanilla%20bean%20paste;%20now%20is%20the%20time.%20I%20love%20this%20stuff%20and%20when%20the%20folks%20at%20Nielsen-Massey%20sent%20me%20some%20vanilla%20products%20to%20sample,%20I%20started%20using%20the%20vanilla%20bean%20paste%20in%20a%20lot%20of%20holiday%20treats%20and%20I%20admit;%20I%E2%80%99m%20totally%20hooked.%20It%E2%80%99s%20vanilla%20beans%20in%20a%20thick%20liquid;%20no%20need%20to%20split%20and%20scrape%20beans%20for%20me%20anymore!%3C/p%3E%3Cp%3EWhen%20my%20daughter%20mentioned%20to%20a%20co-worker%20of%20Mexican%20descent%20that%20I%20was%20making%20cajeta,%20she%20shared%20a%20recipe%20that%20she%20loved%20for%20Empanadas%20de%20Cajeta%20%E2%80%93%20basically%20circles%20of%20pie%20dough%20filled%20with%20cajeta%20that%20are%20folded,%20crimped%20and%20baked%20and%20result%20in%20an%20amazing%20treat.%20I%20so%20wanted%20to%20make%20these%20as%20I%20can%20imagine%20the%20inclusion%20of%20some%20cream%20cheese%20in%20that%20dough%20is%20fantastic%20but%20I%20also%20want%20to%20clear%20out%20my%20fridge%20and%20freezer%20in%20anticipation%20of%20moving,%20so%20I%20decided%20to%20do%20what%20I%20call%20a%20%E2%80%98Sandra%20Lee.%E2%80%99%20I%20used%20frozen%20pie%20dough%20rounds%20for%20my%20empanadas%20that%20were%20filled%20with%20my%20homemade%20cajeta.%3C/p%3E%3Cp%3ETalk%20about%20a%20sweet%20treat;%20they%20were%20lovely.%20But%20I%E2%80%99ll%20tell%20you%E2%80%A6for%20me%20the%20sublime%20is%20simply%20some%20vanilla%20ice%20cream%20with%20a%20bit%20of%20cajeta%20and%20maybe%20some%20toasted%20nuts%20to%20garnish.%20I%20could%20eat%20that%20every%20night.%20Well,%20maybe%20could%20isn%E2%80%99t%20the%20word%E2%80%A6thinking%20%E2%80%98have%E2%80%99%20might%20be%20more%20appropriate.%20The%20method%20for%20making%20Dulce%20de%20Leche%20or%20Cajeta%20is%20the%20same;%20just%20depends%20on%20whether%20you%20use%20cow%E2%80%99s%20milk%20or%20goat%20milk%20but%20either%20one?%20Simply%20divine%E2%80%A6and%20wait%20til%20you%20see%20the%20cocktail%20I%E2%80%99ve%20made%20for%20Friday.%20It%20is%20amazing%E2%80%A6but%20how%20could%20it%20not%20with%20this%20homemade%20%E2%80%98goat%20milk%20candy?%E2%80%99%3C/p%3E%3Cp%3EDulce%20de%20Leche%20or%20Cajeta%20(Goat%20Milk)%20Caramel%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EDissolve%20cornstarch%20and%20baking%20soda%20in%201%20cup%20of%20the%20milk%20in%20a%20large%20pot;%20stirring%20to%20dissolve%20lumps.%3C/p%3E%3Cp%3EAdd%20remaining%20milk%20and%20sugar%20to%20pot%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3ET
