How to Make Your Own Poultry Seasoning is a quick and easy way to make a substitute for this spice if you run out.  Poultry seasoning is good to use in soups and stuffing.  You can use poultry seasoning as a rub for game birds, chicken, turkey, lamb and in many casseroles.  I always have spices on hand and buy a lot of spices at Amish bulk food stores.  If you have the basics, you can make just about any spice yourself. 1 tablespoon ground sage 1 tablespoon ground thyme 1 tablespoon ground marjoram 1 teaspoon dried ground rosemary 1 teaspoon celery seeds 1/2 teaspoon ground nutmeg 1/2 teaspoon black pepper 1/8 teaspoon onion powder, (optional) Mix all ingredients together and store in an air-tight container.  Makes about 1/3 cup poultry seasoning.  Enjoy!
