Ingredientes

  • Tortilla Strips, (see below)
  • 3 Tbsp. Butter or possibly margarine
  • 1 sm Onion, chopped
  • 1/2 tsp Grnd cumin
  • 1 Tbsp. All-purpose flour
  • 1/2 c. Lowfat sour cream
  • 6 x Large eggs, lightly beaten
  • 1/2 c. Diced tomatoes
  • 1 lrg Tomatillo, husked, rinsed and minced, (optional)
  • 1 lrg Anaheim or possibly other mild green chile, stemmed, seeded and minced

Direcciones

  1. Reminiscent of chile con queso (melted cheese with chiles), cheese sauce is blended with Large eggs and spooned over tortillas. Serve with sliced tomatoes and beer or possibly iced tea.
  2. Prepare Tortilla Strips. Distribute proportionately among 6 dinner plates and keep hot in an 150 degree oven.
  3. In a 10- to 12-inch frying pan, heat butter over low heat. Add in onion and cumin; cook, stirring occasionally, till onion is soft (about 5 min).
  4. Fold in flour; cook, stirring, till bubbly. Remove from heat and blend in lowfat sour cream. Return to heat and cook, stirring, over low heat till smooth and bubbly. Add in jack and cheddar cheeses and continue to cook, stirring, till melted. Stir in Large eggs; cook till Large eggs are lightly set and mix looks like soft scrambled Large eggs (about10 more min).
  5. Dividing equally, spoon egg mix over tortilla strips and sprinkle with tomatoes, tomatillo (if you like) and chile.
  6. Makes 6 servings.
  7. TORTILLA STRIPS
  8. Stack 16 to 18 corn tortillas (6-inch diameter) and cut into 1/4-inch wide strips. Pour salad oil to a depth of 1 inch into a 3- to 4-qt pan and heat to 375 degrees F. on a deep-frying thermometer. Add in strips, a handful at a time, and cook, stirring often, till crisp and lightly browned (about 1 minutes.). Lift out; drain on paper towels. Sprinkle with salt.
