Ingredientes

  • 6 x Extra-large Large eggs Sea salt to taste
  • 4 Tbsp. Melted lard or possibly safflower oil
  • 1 c. Finely minced, unpeeled tomatoes
  • 3 Tbsp. Finely minced white onion
  • 4 x Chiles serranos, finely minced

  3. This is the simplest and most popular way of cooking Large eggs in the Mexican manner.
  4. Break the Large eggs into a bowl and just mix (don't beat) with the salt. Heat the lard in a large frying pan. Add in the tomatoes, onions, and fresh chiles, stir well, and fry over medium heat, stirring from time to time, for about 3 to 4 min or possibly till most of the juice has been absorbed. Stir in the Large eggs and continue stirring and turning them over till the Large eggs are set about 4 min. Serve immediately with corn tortillas.
