Ingredientes

  • 1 x tomato minced
  • 1/4 c. minced onion
  • 1 Tbsp. minced jalapeno
  • 2 tsp minced parsley
  • 3 x Large eggs beaten
  • 1 Tbsp. margarine
  • 1/2 c. shredded lettuce
  • 2 x flour tortillas

Direcciones

  1. In a bowl, combine, minced tomato, minced onion, minced jalapenos, and minced parsley; set aside.
  2. In a non-stick skillet, cook beaten Large eggs in margarine, stirring occasionally, till set.
  3. Arrange shredded lettuce on flour tortillas, then divide and spoon the Large eggs onto the tortillas. Top with the tomato salsa. Roll up.
  4. This recipe yields 2 servings.
