As I reflect back on the title of this recipe, I realize that it isn’t a very appealing one! However, “dump” is really the most appropriate word because you literally dump a bunch of stuff into your food processor and pulse away, the color of this one, because of the pepper is to die for…

Hummus Dump
INGREDIENTS:
- 16 ounces chickpeas-drained and rinsed
- 6 ounces roasted red bell peppers
- 1 jalapeno-seeded, diced
- 2 cloves garlic-chopped
- 3 tablespoons chopped cilantro
- 1 teaspoon paprika
- 3 tablespoons red onion-chopped
- Salt and pepper, to taste
- 1/4 cup olive oil
DIRECTIONS:
Mix all ingredients except olive oil in food processor until pureed, then slowly add in olive oil. Cover and refrigerate for at least 1 hour before eating. Serve with fresh pita breads, toasted.
