Hungarian Cauliflower Soup

Ingredientes

  • 8 c. Lowfat milk
  • 1 x Onion, finely minced
  • 1 x Carrot, finely minced
  • 6 ounce Ham, cut into small pcs
  • 1 head cauliflower
  • 1/2 c. Lowfat sour cream
  • 2 tsp Salt White pepper

Direcciones

  1. In a saucepan bring the lowfat milk to a boil. Strain it through a fine strainer into a large pot. Add in the onion, carrot and ham. Cover partially and simmer over medium heat for 10 min, taking care which it does not boil over. Meanwhile remove the florets from the cauliflower head and chop them coarsely. Measure out 4 c. and add in to the soup. Simmer for 15 min more. In a small bowl stir a little of the warm soup into the lowfat sour cream till smooth. Add in this mix to the remaining soup along with the salt and some white pepper to taste. Simmer briefly, stirring well. Adjust the seasoning and ladle into warmed bowls.
  2. Serves 4-6.
