Hungarian Goulash With Dumplings

Ingredientes

  • 1 lb Braising steak, diced
  • 1 x Onion, diced
  • 3 x Carrots, diced
  • 3 stk celery, diced
  • 2 x Leeks, diced
  • 3 x Cloves garlic, crushed
  • 2 pch paprika
  • 1 x Stock cube
  • 3 tsp Tomato puree
  • 2 x Glasses red wine Salt and pepper Extra virgin olive oil
  • 2 Tbsp. Flour
  • 2 pt Water
  • 1/2 pt Water
  • 1 ounce Butter
  • 4 ounce Flour
  • 2 x Large eggs

Direcciones

  1. Heat a drizzle of oil in a pan and add in the meat. Add in the garlic and paprika and stir, then add in the vegetables and stir for 3 min. Add in the tomato puree and red wine, then the flour to absorb the fat and give the dish body. Next add in the stock cube and water, season with salt and pepper and cook for an hour.
  2. To make the dumplings, bring the water to the boil and add in the butter. Add in the flour till it thickens, cooking out the starch so the mix leaves the side of the pan as one ball. Once it comes away from the sides, leave to cold. Add in the egg, drizzle by drizzle, so which the mix incorporates it all. Place the mix into a piping bag and pipe small balls into the stew.
