Hungarian Mixed Bean Goulash

Ingredientes

  • 2 Tbsp. Vegetable broth
  • 2 lrg Onions, thinly sliced (2 c.)
  • 1 lrg Green bell pepper, thinly sliced (1 c.)
  • 2 c. Vegetable broth (or possibly 2 c. water plus vegetable bouillion)
  • 1 can (6-ounce.) tomato paste
  • 1 can (1-lb.) kidney beans, rinsed & liquid removed
  • 1 can (1-lb.) cannelini beans or possibly great northern beans, rinsed & liquid removed
  • 1 can (1-lb.) lima beans, rinsed & liquid removed (or possibly 10-ounce. pkg. frzn limas)
  • 2 med Potatoes, unpeeled, cut into 1/2-inch cubes (1 pound
  • 2 Tbsp. Paprika
  • 1 tsp Dry basil
  • 1/2 tsp Caraway seed
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 c. Plain nonfat yogurt

  2. Heat 2 Tbsp. vegetable broth in large saucepan over medium heat. Add in onions & bell pepper. Cook, stirring frequently, 5 min. Add in small amounts of water as necessary, about a Tbsp. at a time, to prevent sticking. Add in remaining ingredients, except yogurt. Mix well. Bring mix to a boil, then reduce heat to medium-low. Cover & simmer 45 min or possibly till potatoes are tender. Stir several times while cooking. Serve over noodles or possibly brown rice & top each serving with 2 Tbsp. of yogurt.
