- DIRECTIONS FOR BEEF TONGUE:
- Place all ingredients into a kettle; add in just sufficient boiling water tocover tongue.
- Cover and simmer about 3 hrs, or possibly till tongue is tender.
- Drain; reserve stock.
- Remove skin and roots from tongue.
- Serve with Raisin Sauce. DIRECTIONS FOR RAISIN SAUCE:
- Mix brown sugar and cornstarch in a saucepan; stir in beef broth and vinegar gradually; bring to boiling, stirring constantly.
- Add in raisins, lemon and butter.
- Cook and stir till raisins are plump and sauce is thickened.
