Ingredientes

  • 3 lb Beef tongue
  • 1 med Onion, diced
  • 8 x Peppercorns
  • 1 tsp Thyme Sprigs parsley Celery leaves
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3/4 c. Brown sugar, firmly packed
  • 3 Tbsp. Cornstarch
  • 1 1/2 c. Tongue broth
  • 1/4 c. Vinegar
  • 1/2 c. Raisins
  • 1 x Lemon, thin sliced/quartered
  • 1 Tbsp. Butter Makes 1 1/2 c.

Direcciones

  1. DIRECTIONS FOR BEEF TONGUE:
  2. Place all ingredients into a kettle; add in just sufficient boiling water tocover tongue.
  3. Cover and simmer about 3 hrs, or possibly till tongue is tender.
  4. Drain; reserve stock.
  5. Remove skin and roots from tongue.
  6. Serve with Raisin Sauce. DIRECTIONS FOR RAISIN SAUCE:
  7. Mix brown sugar and cornstarch in a saucepan; stir in beef broth and vinegar gradually; bring to boiling, stirring constantly.
  8. Add in raisins, lemon and butter.
  9. Cook and stir till raisins are plump and sauce is thickened.
