Happy April 1st!! More commonly known as April Fool’s Day

But don’t worry, no fools here. Sarah over at the shu box said it perfectly! I hate April Fool’s jokes. A few years ago, when Parrish and I were just dating, he told me that he was moving to Portland, Oregon. Instead of realizing it was April 1st and laughing, I thought he was serious and started crying. Scratch that…started BAWLING. He then realized that April Fool’s is mean and hasn’t done it since. Or he realized that I’m gullible and cry easily. Either way, I ain’t no fool.

But do you want to know something that isn’t a joke? This past month (March) I blogged EVERY.SINGLE.DAY. Did you notice?! It was amazing! It’s been a goal for oh….three years.

So it seems that most of you thought I was making Coconut Shrimp for supper last night! Good guess, and you were close:

Crispy Coconut Chicken!

Pro: It’s stinkin’ delicious; Con: It takes time to marinate and I ran out of natural day light to snap pictures!

Pro: It’s a pretty simple recipe; Con: I didn’t get home until 6:45 last night

Pro: well….just look at them! YUUUUMMMMMM

Yeah, the pros outweigh the cons.

To make: In a large bowl, combine one can light coconut milk, 1 tbsp. Moore’s Sauce, and the juice of one lime. Whisk to combine. Add your rinsed chicken. Let marinate for one hour. (I sliced chicken breast in to smaller tenders, but you could also do large pieces)

In a second large bowl, combine 1/2 cup kinnikinnick GF panko breadcrumbs, 1/2 tsp. salt, and 3/4 cup shredded sweetened coconut. You can play around with the ratio of breadcrumb to coconut, dependent on your taste.

Once the chicken has marinated, dredge in the breadcrumb/panko mix. Really press it down to make it stick. Place on a baking/cooling sheet hybrid. Spray generously with cooking spray. Carefully flip chicken over and spray the other side.

Bake at 400 degrees for about 30-35 minutes or until chicken is cooked.

I let mine cook about 5 minutes too long, but it didn’t matter! (I lost track watching an episode of Friday Night Lights) I’ll let you know if it reheats well!
