%20loves%20to%20see...FREE!!!%3C/p%3E%3Cp%3EOf%20course%20we%20had%20to%20stop.%20And%20let's%20just%20say,%20we%20know%20the%20brakes%20on%20mom's%20SUV%20work%20great!%20I%20jumped%20out%20and%20they%20had%20beautiful%20sweet%20corn,%20cucumbers,%20tomatoes%20and%20zucchini%20fresh%20from%20the%20garden.%20I%20really%20was%20only%20in%20need%20of%20some%20cukes%20for%20dinner%20that%20night,%20but%20I%20couldn't%20just%20walk%20away.%20I%20already%20had%20corn%20and%20maters%20in%20the%20fridge,%20but%20no%20zucchini.%20So%20I%20grabbed%20one.%20A%20huge%20one.%20I%20got%20back%20in%20the%20car%20and%20mom%20asked%20me%20what%20I%20was%20going%20to%20do%20with%20it.%20%22I%20have%20no%20idea.%20But%20it%20when%20it's%20this%20nice%20and%20free,%20I%20have%20to%20take%20it.%22%20She%20laughed%20and%20knew%20exactly%20what%20I%20was%20talking%20about,%20because%20it%20was%20something%20she%20would%20totally%20do%20too.%3C/p%3E%3Cp%3ESo%20it%20resided%20in%20the%20fridge%20for%20a%20few%20days%20until%20I%20finally%20figured%20out%20what%20I%20wanted%20to%20do%20with%20it.%20This%20was%20about%20the%20time%20little%20man%20got%20sick%20with%20strep%20throat%20too,%20so%20I%20wanted%20to%20bake%20him%20something%20yummy,%20but%20still%20soft%20enough%20he%20could%20swallow%20it.%20I%20knew%20some%20muffins%20warm%20from%20the%20oven,%20were%20just%20what%20he%20needed%20to%20brighten%20his%20day.%20(After%20all,%20the%20poor%20kid%20was%20missing%20a%20day%20of%20school%20after%20only%20being%20back%20for%20nine!)%3C/p%3E%3Cp%3EIf%20you%20are%20in%20the%20need%20of%20quick%20breakfasts%20for%20busy%20mornings,%20these%20would%20be%20perfect.%20They%20can%20even%20be%20eaten%20on%20the%20go!%20Or%20make%20them%20for%20a%20delicious%20after%20school%20snack%20when%20the%20kiddies%20get%20off%20the%20bus.%20Or%20they%20make%20a%20fantastic%20dessert,%20warm%20with%20a%20little%20butter%20spread%20on...mmmmm.%3C/p%3E%3Cp%3EIf%20your%20garden%20is%20still%20giving%20you%20plenty%20of%20zucchini,%20here%20is%20a%20great%20way%20to%20use%20it%20up.%20Or%20maybe%20you're%20like%20me%20and%20you%20have%20some%20free%20produce%20sitting%20in%20the%20crisper%20drawer%20because%20you%20too%20can't%20pass%20up%20a%20good%20deal.%20Either%20way,%20these%20are%20simple,%20delicious%20and%20zucchini's%20new%20best%20friend.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%20Grease%206%20large%20muffin%20cups,%20or%20use%20paper%20liners.%20In%20a%20large%20bowl%20combine%20flour,%20sugar,%20baking%20soda,%20baking%20powder,%20salt%20and%20cinnamon.%20Stir%20to%20combine.%20In%20a%20small%20bowl%20whisk%20together%20oil%20and%20egg.%20Add%20to%20flour%20mixture.%20Stir%20until%20moistened.%20Fold%20in%20zucchini,%20walnuts%20and%20raisins.%20Scoop%20into%20muffin%20in,%20filling%20each%203/4%20full.%20Sprinkle%20with%20cinnamon/sugar%20and%20a%20few%20rolled%20oats.%20Bake%20for%2020-25%20minutes%20until%20a%20tooth%20pick%20comes%20out%20clean.%20Cool%205%20minutes%20on%20wire%20rack.%20Remove%20from%20pan.%20Finish%20cooling%20on%20rack.%20Makes%206%20extra%20large%20muffins.%20*NOTE*%20To%20make%20cinnamon/sugar%20mixture%20combine%20combine%201/4%20c.%20sugar%20and%201%20TBS%20cinnamon.%20Mix%20well.%20Store%20in%20airtight%20container.%20I%20keep%20this%20on%20hand%20at%20all%20times.%20It's%20great%20for%20toast,%20muffins,%20etc.%3C/p%3E%3Cp%3EDisclaimer:%20As%20a%20Field%20Editor%20of%20Taste%20of%20Home,%20I%20share%20my%20own%20thoughts%20and%20opinions%20of%20this%20recipe.%20I%20am%20not%20a%20paid%20employee.%3C/p%3E){kind=link}
