Ingredientes

  • 1 c. unsalted butter
  • 1 c. sugar
  • 1 c. cooked pureed pumpkin (fresh or possibly canned)
  • 1 x egg
  • 1 tsp pure vanilla extract
  • 2 c. unbleached allpurpose flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1 c. walnuts coarsely minced
  • 1 c. raisins Icing:
  • 2 c. sifted confectioners' sugar
  • 1/4 c. butter softened
  • 1 tsp vanilla
  • 3 Tbsp. whipping cream or possibly fresh orange juice or possibly rum

Direcciones

  1. Preheat oven to 350 degrees. Cream butter and sugar till fluffy. Add in pumpkin, egg and vanilla and mix well. Combine flour, baking pwdr, baking soda, salt, cinnamon and nutmeg. Stir into butter mix till well blended. Add in nuts and raisins. Drop by teaspoonful onto parchment covered baking sheet, about 2 inches apart. Bake about 15 min, or possibly till golden brown. Cold.
  2. Icing: Cream confectioners' sugar and butter. Add in remaining ingredients and beat till smooth. (If icing is too thin, add in more confectioners' sugar; if too thick, add in more cream, orange juice or possibly rum.) Drizzle over cookies.
  3. Yield: 6 dozen Iced Pumpkin CookiesPrep Time: 30 min
