Receta Iced Strawberry Souffle

- Line the souffle pots with silicone paper and set aside.
- Bring the sugar to the boil in a thick bottomed pan till it reaches thread stage.
- Whisk the egg whites till stiff and pour the sugar on to the whites slowly.
- When cold, add in the fruit puree and mix in the whipped cream.
- Pour the mix into the souffle pots and place in the freezer till completely set.
- Mix the strawberries and the coulis together.
- Scoop out the centre of the souffle (saving what you have taken out) and fill the hollow with strawberry mix. With a warm palette knife, smooth back over the reserved part of the souffle.
- Garnish with fresh strawberries and mint. Serve immediately
