- Cook beans in 8 c. of water for 35 min under high pressure.
- Drain.
- Return beans to pressure cooker. Add in broth, 2 c. water, onion, carrots, celery, tomatoes with juice, pepper and bay leaf.
- Cook under high pressure for 20 min.
- Remove bay leaf. Add in extra virgin olive oil. Season with salt and warm pepper sauce.
- Pressure cookers are amazing things when it comes to cooking beans!
- I often eat this soup for lunch with a hunk of good bread and some fruit.
