Ingredientes

  • 1 lb white beans
  • 8 c. water
  • 2 c. water
  • 6 c. chicken broth
  • 1 1/2 c. minced onion
  • 2 1/2 c. carrots sliced or possibly diced
  • 1 1/2 c. celery sliced or possibly diced
  • 16 ounce tomatoes freshly grnd pepper to taste
  • 1 x bay leaf
  • 2 Tbsp. extra virgin olive oil
  • 3/4 tsp salt optional
  • 1/4 tsp warm pepper sauce or possibly to taste

Direcciones

  1. Cook beans in 8 c. of water for 35 min under high pressure.
  2. Drain.
  3. Return beans to pressure cooker. Add in broth, 2 c. water, onion, carrots, celery, tomatoes with juice, pepper and bay leaf.
  4. Cook under high pressure for 20 min.
  5. Remove bay leaf. Add in extra virgin olive oil. Season with salt and warm pepper sauce.
  6. Pressure cookers are amazing things when it comes to cooking beans!
  7. I often eat this soup for lunch with a hunk of good bread and some fruit.
